Thanksgiving is right around the corner! This year I made pumpkin ice cream for dessert. There really isn’t anything pumpkin flavored in Australia and they don’t sell canned pumpkin either. So, if you want anything with pumpkin in it, you need to boil it your self. Here is the recipe I used to make my pumpkin ice cream.
1 cup boiled, pureed pumpkin
1/4 cup brown sugar
1/2 tsp cinnimon
1/2 tsp ground ginger
dash of salt
2 cups softened vanilla ice cream
Mix everything together and then put it back into the freezer to get solid again. Try not to let the ice cream get too melted because the ice cream will freeze too quickly and get ice crystals in it. I served it with a gingerbread cookie.
